Chassagne-Montrachet 1er Cru Les Vergers
In the south of the Côte de Beaune, Chassagne-Montrachet shares with Puligny the uncontested Prince of all dry white wines in creation: the divine Montrachet. The clay-limestone soils bring out all the richness of the Chardonnay varietal.
Vinification & Elevage
The grapes are harvested by hand and placed in small crates to prevent the bunches being compacted. For our white wines, the grapes are brought whole to our pneumatic wine press. Slow gentle pressing allows the juices to be extracted in the best possible conditions. These juices are then placed in a settling vat and cooled to 8° for 24 hours to clarify them. Lastly, they are placed directly in oak barrels (30 % of which are new) for alcoholic fermentation over 14 months.
Commentaries by our oenologist
A taut nose with notes of blackcurrant buds. In the mouth, this wine reveals aromas of red fruit and acacia blending with verbena and rare spices. The finish is powerful and energetic.
Goes well with crab soufflé, fillet of trout with mustard, poulard with foie gras cream sauce.
